LYST opened its doors for the first time in November 2019 in Fjordenhus designed by the Danish-Icelandic artist Olafur Eliasson and his partner the German architect Sebastian Behmann. Although the restaurant’s first year was marked by restrictions and closures because of the Covid-19 pandemic, LYST quickly gained international recognition.

By the end of 2020, food critics proclaimed LYST to be one of the most ambitious restaurant projects in Scandinavia. This led one of Denmark’s leading reviewers, Ole Troelsø, to make the following recommendation: “Hurry up and book a table before it becomes impossible. Because it will be.” This prediction seems to be coming true.
